~Kimchi Jjigae, 김치 찌개~

The school has just started. I'm now a third year student of dentistry course A.K.A a first year student of the clinical phase in dentistry!! The briefing about clinical dentistry was so FRIGHTENING!! I was scared to death..

enough with my school life. I wanna share this recipe that has been my family fave since my last precious holiday.


Kimchi Jjigae, 김치 찌개


a variety of jjigae or stew-like Korean dish made with kimchi and other ingredients, such as scallions,onions, diced tofu, chicken, and seafood.
~Kimchi jjigae~

Ingredients (bahan-bahan):


For marination (utk perap)-
50-100 ml kimchi juice (taken from the kimchi-squeeze) 
jus kimchi (boleh amik dari packet kimchi dan perah dari kimchi)
chicken
ayam
3 tsbs light soy sauce
3 sudu besar kicap cair
a little bit sesame oil
sedikit minyak bijan
salt
garam
black pepper
serbuk lada hitam


for the soup (utk sup)-
3 cups of chicken stocks
3 cawan stok ayam
2 cloves of mashed garlic2 bawang putih cincang
Salt to tasteGaram
Green onions

1 tablespoon of chili powder
serbuk cili

250g Kimchi


Other optional ingredients (Bahan yang lain, x nak letak xpe):
Tofu,  broccoli,  radish, cabbage, carrots, potatoes, mushrooms, baby corn, etc.



Directions (cara-cara):

  1. Marinate the all the ingredients for marination for about 30 minutes. Perapkan semua bahan yang perlu diperap selama 30 minit.
  2. Combine kimchi and chicken stock in a pot and bring to a boil. Didihkan kimchi dan stok ayam dalam periuk.
  3. Add the chicken and let it cook. Masukkan ayam yang telah diperap tadi dan biarkan ia masak.
  4. Add the rest ingredients for 10-15 minutes under medium heat. Masukkan bahan-bahan yang lain dan masak selama 10-15 minits dengan api sederhana.
  5. Done!! Siap!!

~Jabchae,잡채~

Alhamdulillah, after being immersed into very hectic week, finally..I'm Free! (just for a moment)..
Next week..SCHOOL!!


oh well, i would like to share this recipe from korea.
Specially to Nur Adibah Abdul Nasir (sorry for the delay).


JABCHAE, 잡채 (taken from wiki)


a Korean dish made from sweet potato noodles (called dangmyeon), stir fried in sesame oil with various vegetables (typically thinly sliced carrots, onion, spinach, and mushrooms), sometimes served with beef, and flavoured with soy sauce, and sweetened with sugar. It is usually served garnished with sesame seeds and slivers of chili. It may be served either hot or cold.

here is the recipe:


Ingredients:
  • Starch noodles (or rather we called as Soo Hoon, Suun)
  • 150 grams of beef
  • Spinach
  • 1 medium size carrot
  • 1 medium size onion
  • mushrooms (shitake or white mushroom)
  • 3 cloves of garlic
  • 7-8 green onions
  • soy sauce, sesame oil, sugar, pepper, and sesame seeds

Preparation:
  1. Soak dried shitake mushrooms in warm water for a few hours until they become soft. Squeeze the water out of them and slice thinly.
  2. Slice a package of white mushrooms (2 cups’ worth).
  3. Cut a carrot into thin matchstick-shaped pieces 5 cm long.
  4. Cut 7 -8 green onions into 7 cm long pieces.
  5. Slice one onion thinly.
  6. Slice 150 grams of beef into thin strips.

Cooking:
  1. Boil 2 bunches of noodles in boiling water in a big pot for about 3 minutes. When the noodles are soft, drain them and put in a large bowl.
  2. Cut the noodles several times by using scissors and add 1 tbs of soy sauce and 1 tbs of sesame oil. Mix it up and set aside.
  3. Simmer the spinach and put it aside.
  4. On a heated pan, put a few drops of olive oil and your carrot strips and stir it with a spatula for 30 seconds. Put it into the large bowl (don’t burn it!).
  5. Place a few drops of olive oil on the pan and add your sliced onion. Stir it until the onion looks translucent. Put it into the large bowl with your carrots.
  6. Place a few drops of olive oil on the pan and add the sliced white mushrooms. Stir it for a bit and then put it in the large bowl.
  7. Place a few drops of olive oil on the pan and add your green onions. Stir for 1 minute and put it into the large bowl.
  8. Place a few drops of olive oil on the pan and add your beef strips and your sliced shitake mushrooms. Stir it until it’s cooked well, then add 3 cloves of minced garlic, ½ tbs soy sauce and ½ tbs sugar. Stir for another 30 seconds and then put it into the large bowl.
  9. Add 2 tbs of soy sauce, 3 tbs of sugar, 2 tbs of sesame oil, and 1 ts of ground pepper to the large bowl. Mix all ingredients, then sprinkle 1 tbs of toasted sesame seeds on the top.
  10. Serve with rice and Kimchi, or as a side dish

I took this recipe from my korean recipe book that i bought at Kinokuniya.
It is very easy to follow. As for me, to make it easier and time saving, i cooked all of them together and finally, i just add up the noodles.

All my family just love this dish!!
